What really differentiates brown sugar from regular sugar is its tendency to turn rock solid if it is not stored properly.

To keep brown sugar soft and scoopable add an orange peel or a slice of apple along with the sugar into an airtight container.

Another trick is to store your brown sugar with a piece of bread. Instead of coagulating and losing moisture, the sugar absorbs moisture from the bread. The bread dehydrates and becomes inedible, but it actually doesn’t get moldy. It just saves your brown sugar.
